THE STORY BEHIND

Published in 1895, “The Splash of a Drop” by Arthur M. Worthington is a pioneering study in fluid dynamics. Worthington, a british physicist, uses high-speed photography to capture and analyze the intricate stages of a liquid drop’s impact on a surface. This groundbreaking research not only enhanced our understanding of fluid mechanics but also highlights the beauty and complexity of seemingly simple natural phenomena.

Worthington’s exploration mirrors the journey of creating natural wine, where every drop tells a story of the vineyard, the soil, and the artisanal craftsmanship. Just as Worthington reveals the beauty within a splash, our natural wine collection embodies the essence of nature’s artistry. THE WINEGROWER: LOUS GREZES

Our first natural wine collection season is curated together with renowned Domaine Lous Grezes from Ribautes-les-Tavernes, Languedoc. Founded in 2003, Luc and Trees Lybaert have since been working 100% naturally, without any additives and without any oenological interventions (zero-zero). Known for their mineral-rich and complex wines, also recognized by Gault & Millau as “Vignerons of the year” in 2011-2012, they export to Japan, Quebec, Singapore, Usa, South Korea, and Europe, highlighting their international appeal.

Domaine Lous Grezes is a pioneer in natural wines without added sulphites, committed to minimal intervention and sustainable practices. Their organic and biodynamic approach offers wine enthusiasts unique, high-quality, and long-lasting natural wines.

They are a member and driving force of VINS SAINS, an association dedicated to promoting natural wines made without synthetic chemicals and with minimalistic intervention. VINS SAINS advocates for transparency in winemaking practices, supporting winegrowers who prioritise the health of their vineyards and the environment.

Everything at Domaine Lous Grezes is made by hand, without the use of big machinery. They practice very limited to no intervention in the vineyard. Grapes are picked by hand and spontaneous fermentation takes place in the cellar. Their wines undergo no filtration, long maceration, and elevation. This hands-on approach and respect for natural processes ensure that all wines offer a unique taste of the terroir.
